im so excited to begin sharing some simple cooking, craft & anything home ec' tricks tips etc post because as a mommie I know the older Joslin gets I will look for special but simple little activities we can do together.

What you'll need:

strawberry box cake mix
strawberries
cream cheese
butter
vanilla extract
confectioners sugar

Make cupcake batter.
Lick Spoons of course.....
Put in Oven & then begin Homemade Strawberry Frosting!
Decorate
and....EAT
In 20min's they baked some delicious cupcakes, made a few messes and laughed a lot. Watching them both enjoy each other so much made me so excited about the days when Joslin will help me cook, or at least come sneak some samples while i pretend not to look.

How do you feel about zucchini bread? It's cake like in taste. The recipe is at Grams, so as soon as I remember I'll bring it for you. Or you can text me and remind me :)

ReplyDeleteOk, here goes.
ReplyDeleteAdd/mix the ingredients in the following order (we use grams stand mixer thing that I can just leave on and keep adding).
2 cups sugar
1 cup vegetable oil
3 eggs
3 cups all-purpose flour
1/4 tsp baking soda
1 tsp salt
1 tsp cimmamon (add to taste)
2 cups grated fresh zucchini (which is about 2 zucchinis if you are using ones that could easily be confused with cucumbers)
2 tsp vanilla
optionals: (add one of these last if you want, but they aren't required)
1 cup nuts
1 cup raisins
2 cups chocolate chips (we've tried semi-sweet and white chocolate and prefer the white ones personally)
Bake at 350 for 50 minutes. (we typically use 2-3 loaf pans, but muffin pans work too, or mini bread pans if you want to share, or mini muffins :)
According to my aunt, if you freeze it, make sure you pull it out of the freezer in enough time for the choc to thaw (if you use choc)
Love it as much as we do :)
